<p class="wp-block-paragraph">Making a vegan just egg omelet is easy and even, fun!</p>



<p class="wp-block-paragraph">When I was at a conference many years ago a chef at the breakfast was cooking omelets and he told me how to make them. I have been doing it ever since!</p>



<p class="wp-block-paragraph">Back then I wasn’t vegan so it was regular eggs. Now I use only Just Egg!</p>



<p class="wp-block-paragraph">As a busy mom I’m always looking for ways to make things easier. Here is how I make a fast, easy vegan Just Egg omelet:</p>



<h2 class="wp-block-heading">Gather Your Perfect Omelet Cooking Tools</h2>



<p class="wp-block-paragraph">When I first decided to learn how to make the perfect omelet I knew I needed great tools.</p>



<p class="wp-block-paragraph">My regular sticky pans would not do. I went out and bought a small pan, a Paderno 7.9 inch non-stick pan. I also bought a silicone spatula, which I will explain how to use further down in the instructions.</p>



<h2 class="wp-block-heading">Gather Your Just Egg Omelet Ingredients</h2>



<ul class="wp-block-list">
<li>Veggies – I love to buy a mixed veggie tray from the grocery store, pre-chopped. Then I chop them even smaller.</li>



<li>Just Egg – of course! You’ll need this for your “egg” part.</li>



<li>Vegan Cheese – Nuts for Cheese is a delicious cashew cheese brand that I use.</li>



<li>Salt – Just add a little after it’s cooked.</li>

<p class="wp-block-paragraph">Once you’ve gathered your ingredients and chopped your veggies up small then it’s time to get cooking!</p>



<p class="wp-block-paragraph">My veggie tray includes yellow peppers, mushrooms, red onions, red peppers and asparagus.</p>



<h2 class="wp-block-heading">How to Make Your Just Egg Omelet</h2>



<p class="wp-block-paragraph">Turn your burner on to medium heat and use your favorite oil on the pan.</p>



<p class="wp-block-paragraph">Pour in 1/3 of the Just Egg into the pan. Mix in the veggies.</p>



<p class="wp-block-paragraph">What you’ll want to do now is to let it fry up a bit until the Just Egg gets a little thicker. The trick to an omelet is to help the “egg” cook up to the same consistency all around. You do this by using the spatula to lift the cooking egg and tipping the pan so the liquid egg flows to the bottom of the pan. Like this:</p>

<p class="wp-block-paragraph">Once your omelet is cooked to the same consistency throughout (no longer running or mushy) then you’ll add the vegan cheese.</p>



<p class="wp-block-paragraph">After the vegan cheese has melted a bit you just go ahead and flip it over like this:</p>

<p class="wp-block-paragraph">This one is a little darker than I’d like because I had the heat up too high (being impatient). Keep the heat low after the initial cooking and you should have a nicely browned but not too dark omelet.</p>

<h2 class="wp-block-heading">How to Reheat an Omelet</h2>



<p class="wp-block-paragraph">If you make more than you can eat in one sitting (never happens to me haha) you can reheat your omelet in the microwave but I would recommend you don’t do that. I reheat everything in the oven by putting a teaspoon or two of water on top and then heating for 10 minutes or so. If it’s a large piece of omelet you can break it up so it cools in the middle.</p>

<p class="wp-block-paragraph">Making crispy rice paper rolls seemed a bit too complicated to me. I’m no vegan chef!</p>



<p class="wp-block-paragraph">I really never would have attempted them if it wasn’t for random chance…</p>



<p class="wp-block-paragraph">One day I was walking around the grocery store and picked up a package of rice paper on a whim. I thought I’d try making the rice paper spring rolls I’d seen on Instagram, or somewhere.</p>



<h2 class="wp-block-heading">Are spring rolls vegan?</h2>



<p class="wp-block-paragraph">These crispy vegan rice paper spring rolls are! They’re vegan and delicious!</p>

<h2 class="wp-block-heading">How to Make Vegan Spring Rolls:</h2>



<p class="wp-block-paragraph">You will need:</p>



<ul class="wp-block-list">
<li>Rice Paper.</li>



<li>Tofu.</li>



<li>Vegetables of Choice (I use carrots, red pepper, onion, asparagus).</li>



<li>Sauce (I used Teriyaki sauce).</li>



<li>Spices (I used minced garlic, tumeric and ginger)</li>
</ul>



<h2 class="wp-block-heading">How to Cook Fried Crispy Vegan Spring Rolls</h2>



<p class="wp-block-paragraph">The first thing to do is gather your ingredients and prep your work area.</p>



<p class="wp-block-paragraph">Fill a bowl with water. You will use this to dip your rice paper in to soften it so you can wrap up your spring rolls.</p>



<p class="wp-block-paragraph">Here are the steps you’ll follow to make these rolls:</p>



<ol class="wp-block-list">
<li>Pan-fry the spring roll filling.</li>



<li>Dip the rice paper and roll up the filling in the paper.</li>



<li>Pan-fry the spring rolls to a crispy outside.</li>
</ol>



<h3 class="wp-block-heading">Step 1: Pan-Fry the Spring Roll Filling</h3>



<p class="wp-block-paragraph">Ok so you can use any vegetables you like inside your vegan spring roll. I used peppers, carrots, asparagus and onions. Fry this in a little spray of oil and spices of your choice on a non-stick frying pan.</p>



<p class="wp-block-paragraph">Break up your tofu to a crumbled texture like this:</p>

<p class="wp-block-paragraph">A meat chopper&nbsp;<a href="https://web.archive.org/web/20250126155312/https://amzn.to/3RKPexn">like this one from Amazon</a>&nbsp;is the tool I use to quickly break up the tofu.</p>

<p class="wp-block-paragraph">Add the tofu to the pan and then add spices and sauces. I use Tofu and Hoisin sauce.</p>

<p class="wp-block-paragraph">Set your cooked fillings to the side.</p>



<h3 class="wp-block-heading">Step 2: Dip the rice paper and roll up the filling in the paper.</h3>



<p class="wp-block-paragraph">Ok this part takes some getting used to but you can do it!</p>

<p class="wp-block-paragraph">Dip the rice paper quickly into water for a few seconds, just enough to soften it.</p>

<p class="wp-block-paragraph">Using your non-stick pan and a light spray of oil fry your spring rolls until they are crispy.</p>

<p class="wp-block-paragraph">Yes, they take some work but they’re worth it! Next time I’ll try freezing them as well so I can make a bigger batch. I’ll let you know how that goes! That would make it easy to have a fast, delicious addition to a meal or as an appetizer!</p>

<p class="wp-block-paragraph">This is a super simple homemade vegan pasta recipe:</p>



<ul class="wp-block-list">
<li>2 Cups of Flour</li>



<li>1/2 Cup of Water</li>



<li>1/2 Tsp of Salt</li>
</ul>



<p class="wp-block-paragraph">Pour the flour onto a cutting board and make a well in the middle. Add the water and salt into the middle and carefully mix it together. Then kneed the dough until it is springy.</p>



<p class="wp-block-paragraph">Use a pasta maker <a href="https://amzn.to/3Pd5M0I">like this one</a> to roll out the dough.</p>



<p class="wp-block-paragraph">Let the dough rest for no more than four hours in the fridge. When you’re ready take it out and use the machine to flatten the dough to make ravioli or cut it into smaller pieces for spaghetti.</p>



<p class="wp-block-paragraph">Here’s my hubby and daughter using the machine. I’ll get a better photo later!</p>

<p class="wp-block-paragraph">This homemade vegan pasta recipe is so easy to make and I absolutely LOVED the ravioli recipe, vegan, below!</p>



<h2 class="wp-block-heading">Homemade vegan pasta recipe – Ravioli!</h2>



<p class="wp-block-paragraph">This was so delicious!</p>



<p class="wp-block-paragraph">Ingredients:</p>



<ul class="wp-block-list">
<li>Vegan pasta dough</li>



<li>Vegan cheese</li>



<li>Pesto</li>



<li>Fresh Basil</li>
</ul>



<p class="wp-block-paragraph">Roll out the dough in the pasta machine. Cut one big piece of flattened dough in half and then lay out the bottom half. Use a tablespoon to scoop out the middle filling for your ravioli of the vegan cheese. Put a small scoop of pesto on top. When you’ve completed all the filling get a little container of water and a small brush (or use your finger) to put water along all the remain pasta. Just a little bit of water so that the top and bottom pieces stick together.</p>



<p class="wp-block-paragraph">Then, put the top sheet of vegan pasta dough onto the bottom. You’ll have your filling pieces and you’ll want to cut out each ravioli piece into a square. Then, take a fork and create edges along your ravioli, like this:</p>

<p class="wp-block-paragraph">Top with your favorite pasta sauce or toppings. I topped mine with pesto and basil and it was so tasty!</p>

<p class="wp-block-paragraph">The truth is not all pasta is vegan. The dry pasta in the grocery store is usually vegan – made with flour and water. That’s not including the “fresh” pasta, which usually is not vegan. So definitely check any package you purchase to be sure. Or use the recipe above to make your own vegan pasta!</p>

<p class="wp-block-paragraph">This is how to make garlic bread without butter.</p>



<p class="wp-block-paragraph">Every now and then I’m craving garlic bread, vegan style.</p>



<p class="wp-block-paragraph">I’ve never really like any of the vegan cheese.</p>



<p class="wp-block-paragraph">So one day I thought I’d try out nutritional yeast. Here’s my vegan garlic bread recipe.</p>



<h2 class="wp-block-heading">Vegan Garlic Bread Ingredients:</h2>



<ul class="wp-block-list">
<li>white bread slices</li>



<li>vegan margarine</li>



<li>garlic powder</li>



<li>nutritional yeast</li>
</ul>



<h2 class="wp-block-heading">How to make garlic bread with white bread:</h2>



<p class="wp-block-paragraph">Spread the margarine on each piece of bread.</p>

<p class="wp-block-paragraph">Then add the powdered garlic bread right on top of the margarine. I know it’s standard to create garlic butter first and you totally could by combining the vegan margarine and garlic powder.</p>



<p class="wp-block-paragraph">It’s just quick and easy to add the garlic powder right on top of the vegan margarine:</p>

<p class="wp-block-paragraph">Then top with as much nutritional yeast as you would like – this is the “vegan cheese”.</p>



<p class="wp-block-paragraph">Then cook that in the over, first on 350 degrees to heat and the put it on broil for a few minutes to get it bubbling a bit and create the garlicy cheese top:</p>

<p class="wp-block-paragraph">What’s it like being the only vegan in the family?<br><br>Well I guess that depends on how you look at it and how you address your own values.<br><br>As a mostly vegan eater I’ve made the decision that I will not dictate my families meal decisions by refusing to cook meat for them. So I do buy meat and cook it – and I dissociate from the idea like I did my entire life when I ate meat before 2019.<br><br>I know that’s not the right choice for everyone. I have a friend who is vegan and would not cook anything outside of vegan. That’s her right and her choice. I’m not sure how her family felt about it but they abided by it. Her husband (now ex – no idea if it’s related) would eat meat outside of their family home. Fair enough. If you’re the one doing the cooking you do have the right to make those rules for sure!<br><br>The biggest challenge being the only vegan for me isn’t about whether or not I’ll cook their favorite meals for them, it’s about eating together as a family.<br><br>My daughter is a super picky eater.<br>So is my husband.<br>And then I’m eating vegan.<br><br>It’s tough to find meals that we can all eat together. Well, no, that’s not true. It’s possible but it takes more work than I usually have the energy for honestly.<br><br>So in our home I eat my biggest meal at lunch time and then at dinner I’ll usually have something on the side like a salad, potatoes, bread, etc as a little thing to eat with them.<br><br>This works for us, for now! I’d love to have the time and mental space to think of some really awesome combo meals together. In the past here are some of the adaptable vegan and non-vegan meals we’ve done we’ve done:</p>



<ul class="wp-block-list">
<li><strong>Pasta Dishes</strong> – Easy enough to make a vegan version by taking the pasta out before any dairy-based sauces or meat mixed add-ons are added.</li>



<li><strong>Stir Fry</strong> – I’ll cook the meat for my family and then they’ll combine that with the rice. While I maybe whip up some fried tofu or use some Just Egg to add to it. They don’t like veggies so I’ll throw veggies in with my tofu or Just Egg and throw that on top of my rice.</li>



<li><strong>Tacos </strong>– This is actually one of my favorites! We make up the tacos and I just omit the meat and dairy toppings. I heat up refried beans to add to mine.</li>



<li><strong>Pizza</strong> – We don’t do this often but you can get takeout pizza of course or make your own at home. I will often just take all the toppings off regular pizza but that’s really not much of a meal. I loaded up a takeout pizza with veggies, including pineapple (<img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f631.png" alt="😱" class="wp-smiley" style="height: 1em; max-height: 1em;" />) and it was delicious!</li>



<li><strong>Sheppard’s Pie</strong> – My family LOVES their sheppard’s pie. I haven’t tried this but I will as I just thought of it. I’m going to get Gardien Beefless Ground which my son says is good (could also be used in Tacos) and make my own little side dish of sheppard’s pie. Then I’ll eat it with family.</li>
</ul>



<p class="wp-block-paragraph">I’m sure there’s more.</p>



<p class="wp-block-paragraph">Just writing this has kind of motivated me to try to come up with adaptable meals that me and my family can have so I can get into doing this MUCH more often.<br><br>It’s definitely a challenge but not at all impossible! <p class="wp-block-paragraph">One of my friends told me that this is blog worthy so I agreed and decided to write a blog about it. So here we are.</p>



<p class="wp-block-paragraph">What I want to say is that there is a pretty awesome sense of accomplishment that comes with making your own bread. It might be primal, I’m not sure. Like I somehow because a better caretaker of the family because I can now make bread, lol.</p>



<p class="wp-block-paragraph">I decided to buy some aluminum pans because I didn’t have one the right size and I didn’t have full confidence in my abilities, yet. So I figured spend $3 rather than $30 and see how it goes, first.</p>



<p class="wp-block-paragraph">Well I’m very proud of how well this came out. I followed the recipe exactly so I recommend you do the same. Who knows, you just might be showing off YOUR Focaccia Vegan bread all over social media like I did, lol!</p>



<p class="wp-block-paragraph">Here are some pictures of it during the process of making it:</p>



<p class="wp-block-paragraph">This is the bread dough. I was a little concerned as our fridge is on the fritz and will freeze things. After leaving the dough overnight it was getting close to freezing so I left it to rise for 4 hours (the recipe said 2-4 hours).</p>

<p class="wp-block-paragraph">When I told my husband that I was making focaccia bread he said he had never heard of it which I was so surprised about. He’s a bread guy. I thought everyone knew about it!</p>



<p class="wp-block-paragraph">I’m really excited to try making focaccia bread art with my next batch – just because it looks so fun and creative!</p>



<p class="wp-block-paragraph">Because the bread is a bit different from the normal loaf you might wonder&nbsp;<strong>how to eat focaccia bread</strong>?</p>



<p class="wp-block-paragraph">Personally I just eat it. Today it was my accidental lunch because I ate so much lol! But normally it’s great with soup or chili or as a side to whatever comfort meal you’re having.</p>



<p class="wp-block-paragraph">You can also make some delicious sandwiches out of focaccia!</p>



<p class="wp-block-paragraph">I’ll be storing my focaccia bread with saran wrap on top and leaving it out on the counter. That is until I hear otherwise. I did do a quick google search and that seems fine?</p>
